Description
Vins Petxina supports the environment and promotes the creation of organic wines and the transformation of conventional to organic vineyards. They are wines of little-known style, area or variety, each having their own unique personality. All the grapes come from the vines owned by the winery CELLER 9+, located around the Mediterranean village La Nou de Gaià, 5km far from the sea, close to Tarragona.
The vines are old and the viticulture is based on traditional techniques (following the lunar calendar), always putting quality first. “The vines are small and different. Some face the sea, others don’t. The soil is different from one row to another in the vineyard, but overall they are poor soils. We do a green harvest to reduce production and get more concentration and better maturity of the grapes. The area has a strong effect from the “marinada” (Mediterranean wind), cooling down the temperature and preventing it to rise over 31-32 ºC on the hottest days of the summer” and ensuring a lovely acidity in the wines.
This sparkling wine is made in the Traditional Method.
Completely natural without added sulphites, spontaneous fermentation with wild yeasts and a light filtering using paper after the first fermentation. The only additions are yeast and sugar for the second fermentation. The second fermentation is made with a cork top and the wine is not disgorged – the wine contains the yeast, sealed with the original cork. This helps the wine to improve in complexity until the moment it will be drunk.
Gold yellow colour, lightly cloudy due to the second fermentation lees being present. Elegant bakery aromas and mature fruit. The elegant bubbles are light in the mouth and very well integrated. This wine benefits from a minimum of 15 months maturation in the bottle however it will continue to develop in the bottle for a further 12 years and gain further complexity.
