Description
Recorded in the Domesday book, Nyetimber was established as a vineyard in 1988 in the heart of West Sussex on what is regarded as the perfect site for the production of sparkling wine. Intent of making the finest English sparkling wine, and one to rival the very best in the world, Nyetimber were the first producer to make English Sparkling Wine exclusively from the ‘Champagne varieties’: Chardonnay, Pinot Noir and Meunier. Despite ever-increasing demand for their sparkling wines, they continue to use only estate-grown grapes. This led to considerable vineyard expansion from 2006, with the estate now compromising of 327 hectares under vine across Sussex, Hampshire and Kent.
The Classic Cuvée is their flagship wine and aged for 3 years on the lees, bringing complexity and elegance to both nose and palate. Nutty, toasty aromas predominate with underlying spice, honey and pastry. The palate is equally elegant and developed from the extended ageing on the lees. With baked apple, vanilla and almond; the finish is long, generous and exceptionally elegant.
The lot code on the back label of each bottle provides a precise chronology of each bottle from the moment it was bottled to when it was riddled and disgorged.
