The olives, predominantly native Sicilian varieties such as Biancolilla, Cerasuola and Nocellara del Belice, are hand-harvested in peak condition, in early October to capture vibrant flavour and aromatic intensity. From grove to bottle, every step is dedicated to preserving freshness and expressing the unique character of their beautiful Capparrina estate, an oasis of olive trees that rolls down towards the sea near Menfi.
Production begins with gentle washing and cold-pressing using a continuous cycle that protects delicate polyphenols and aromas. No heat, no excessive processing – just pure, extra virgin oil with all its natural goodness intact. The result is an olive oil with a brilliant deep green colour, intense aromas of fresh herbs, green tomato leaf and artichoke, and a palate that is both fruity and savoury with a balanced, peppery finish.
