The Pierre Mignon Champagne is my go-to for toasts — elegant, creamy and simply joyful. The Craggy Range Chardonnay is a personal favourite; it’s so pure and precise, with that subtle savoury depth that makes it moreish. The Pouilly Fumé brings classic Loire minerality and brightness, a beautiful counterpoint to richer dishes.
For the reds, I couldn’t resist the bold charm of the Hey Diddle Shiraz — it’s full-bodied but wonderfully smooth, perfect for winter evenings. The Revelado adds that plush, spiced Portuguese warmth, while the Cairanne from Alary ties it all together with balance, complexity and finesse.
