Château Monichot is a family-run vineyard in Bordeaux’s Côtes de Bourg. Cuvée Phoenix is made entirely from Merlot grown on clay-limestone soils, from vines aged 30–50 years. Gentle pump overs during fermentation are followed by malolactic fermentation and ageing in vats.
