Description
Viña Pilar Clarete is a beautifully poised, traditional-style clarete that sits somewhere between a rosé and a light red, offering far more depth and complexity than you might expect. Made from a field blend of Albillo and Tempranillo, it captures both freshness and structure in one very elegant wine.
In the glass, it shows a delicate pale salmon colour with subtle copper tones. The nose is layered and expressive, with notes of rose petals, wild strawberries and blood orange, alongside a gentle herbal edge. On the palate, it’s silky and expansive, balancing bright red fruit with nectarine, spice and a fine thread of minerality. There’s real precision here, with fresh acidity carrying everything through to a long, savoury finish touched with citrus peel and dried flowers.
This is a wine shaped by its high-altitude vineyards and careful, low-intervention winemaking. Co-fermented with native yeasts and aged on its lees in a mix of French oak and concrete, it builds texture and complexity while keeping a clear sense of purity and energy.
Bodegas Félix Callejo is a family-run estate on the northern edge of Ribera del Duero, working organically across a mosaic of small plots. Their focus is on expressing each site, and this clarete feels both precise and full of character.
At the table, it’s wonderfully versatile. It works just as well with lighter dishes like tuna crudo or smoked trout as it does with more flavourful plates such as saffron rice with prawns, grilled octopus or chargrilled vegetables with romesco.
