Founded in 2017, The REAL Drinks Co. exists so that everyone can live life unconstrained, whether they’re drinking or not. Founder David had all but given up alcohol and found that nothing paired with food in the same way as a wine. He set about experimenting with fermentation and the impact of conditioning and bottling on superior flavour. REAL’s Naturally Fermented Sparkling Teas are produced in their state-of-the-art Fermentery on the Waddesdon Estate in Buckinghamshire.
Dry Dragon is made using pan-fired Dragonwell tea. Otherwise known as Longjing, this is the highest quality panroasted green tea from Hangzhou, Zheijiang province and ranks as one of the finest teas in China. The region is famous for its natural beauty nestled beside West Lake. Longjing tea leaves are pan-fired in big handfuls in a large open wok. This is a highly skilled process, where the operator delicately controls the level of bake to ensure that they develop the best flavours in the final leaf.
Experts in fermentation, The REAL Drinks Co. produce nonalcoholic Naturally Fermented Sparkling Tea using innovative techniques inspired by winemaking. A small selection of wild yeast and bacteria is nurtured before being inoculated into each batch to initiate a slow fermentation which drives flavour, complexity and consistency.
Light and crisp on the nose with notes of honeydew melon and a delicate leafy undertone. Dry and fresh on the palate with flavours of sweet lemons, grapefruit and a gentle, nutty finish. The perfect partner to summer salads, shellfish and pan-Asian flavours.
