Organically farmed and with a minimum vine age of 35 years, letting nature take its course, Hélène Jaeger-Defaix manages this estate in the same spirit as their vineyards in Chablis. With severe debudding to control vine yield, hand harvested grapes, and the use of natural yeasts wine production here isn’t rushed. The pressing is also slow and gentle, to extract only the best juice. Post fermentation the wine is aged for a further 18 months in French oak barrels with batonnage or stirring the lees, to enhance the elegance of the wine, and this exudes elegance! Aromas of redcurrant, raspberry and blackberry on the nose. The palate is refined and elegant with red fruit, hints of spice and a beautiful silky, supple tannin structure. With fresh acidity and sustained length, this is a standout wine.
