Ken Forrester Wines can trace their heritage back to the 17th Century when the farm lands were granted around the same time that the settlement at Stellenbosch was first built. They are one of the most respected producers in Stellenbosch, widely known for championing Chenin Blanc. The estate sits on the slopes of the Helderberg Mountain, where a mix of warm days and cooling influences helps retain freshness and structure in the wines.
Ken Forrester has built a reputation around quality and consistency, with a hands-on approach from vineyard through to bottling. Old vines, careful site selection and a clear focus on Chenin Blanc underpin the range, from everyday drinking wines through to more premium, cellar-worthy releases.
Sparklehorse reflects that same philosophy, using a grape South Africa does exceptionally well, handled with precision to create something both characterful and refined.
Méthode Cap Classique (often shortened to MCC) is the traditional way of making sparkling wine in South Africa. It follows the same principles as Champagne, where the second fermentation (the stage that creates the bubbles) happens inside the bottle rather than in a tank.
After this second fermentation, the wine is left to rest on the yeast. This period of ageing helps develop finer bubbles and adds texture, along with subtle flavours that can range from lightly toasty to softly creamy.
Once ready, the wine is carefully finished and sealed, resulting in a sparkling wine with both freshness and complexity.
Sparklehorse is made entirely from Chenin Blanc, sourced from carefully selected cool-climate vineyards in Stellenbosch, it combines bright fruit with a fine, creamy mousse and a clean, refreshing finish.
In the glass, it shows notes of apple, pear and quince, with a gentle hint of brioche from extended ageing on the lees.
It makes a lovely aperitif but is equally suited to accompanying lighter dishes.
